INGREDIENTS
4 haddock fillets
½ cup oil
½ cup Supreme Hot/ Mild Fish Masala
⅓ cup plain flour
½ cup Supreme Rice Flour
½ cup cornflour
Oil to shallow fry
Garnish:
Sauteed onions
Sliced chillies
Chopped coriander
Sliced lemons
METHOD
In a bowl, mix together oil, fish masala and plain flour. In another dish mix rice flour and corn flour.
Heat oil in a pot to shallow fry over medium-high heat. Coat the fish fillets in the masala then lightly in the flour mix. Shallow fry in batches until golden and cooked through. Garnish with sauteed onions, sliced chillies, chopped coriander and sliced lemons and serve.
