INGREDIENTS
Marinade:
500g chicken breast
¼ cup Zaytuna olive oil
Juice of 1 lemon
1 tbsp oregano
1 tsp Supreme Coarse Black Pepper
1 tsp Supreme Chilli Flakes
1 tsp Supreme Garlic Powder
Salt to taste
Sauce:
1 ½ cup greek yogurt
¾ cup grated cucumber
¼ cup finely chopped mint
¼ cup finely chopped parsley
1 tbsp minced garlic
Salt to taste
Dressing:
¼ cup Zaytuna olive oil
Juice of 1 lemon
1 tbsp oregano
½ tsp Supreme Coarse Black Pepper
Salt to taste
1 tbsp vinegar
Pinch of sugar
1 iceberg lettuce, washed and shredded into pieces
1cup sliced cucumber
1 cup cherry tomatoes, cut into halves
1 cup sliced red onions
1 cup kalamata olives
I cup sliced green bell pepper
1 cup cubed feta cheese
METHOD
Add all the ingredients for the marinade in a bowl (except for the chicken) mix well, add the chicken and set aside to marinate. In the meantime make the tzatziki and dressing; combine all the ingredients together and set aside in the fridge. Heat a frying or griddle pan over medium-high heat. Add the chicken and cook on both sides until fully cooked through. Remove from the pan and cut into slices. Layer all the lettuce, cucumber, tomatoes, red onion, kalamata olives, green bell pepper, feta cheese and sliced chicken. Pour over the dressing and serve with tzatziki.
