Chicken Nachos

Ingredients: 
Spice blend (mix together):
1 tbsp Supreme Onion Powder 
1 tbsp Supreme Garlic Powder 
1 tbsp Supreme Smoked Paprika Powder 
1 tbsp Supreme Cumin Powder 
1 tsp Supreme Chilli Powder 
1 tsp oregano 
1 tsp sugar

1 tbsp oil
300g chicken breast, cut into small pieces 
Salt to taste 
½ tsp Supreme Coarse Black Pepper 
1 medium red onion, finely chopped 
1 Supreme Chopped Tomato Tin 
½ cup water
.
200g grated mozzarella 
Nachos 
Guacamole 
Jalapenos 
Sour cream 
Coriander leaves 
Method: 
Heat a pan over medium-high heat. Add oil, chicken breast, salt and coarse black pepper. Mix well and cook until chicken is cooked through. Add chopped onions and saute until they start to soften. Now add the spice blend, mix and cook for 1-2 minutes then pour in the chopped tomato tin. Stir well and simmer until the oil separates then add water. Stir well and reduce the heat to low and simmer until the sauce has reduced and thickened. Remove from heat and set aside. 
Preheat the oven at 200°c. 
Layer the nachos: lay the nachos in an even layer on a lined baking tray. Add an even layer (half) of the grated mozzarella on top. Then spoon over the chicken mixture. Sprinkle the remaining mozzarella on top and bake in a preheated oven for 10-12 minutes or until the cheese has melted. 
Remove from the oven and top with guacamole, jalapenos, sour cream and coriander leaves. Serve immediately.
