INGREDIENTS
2 cups green apples, peeled & cut into 1 cm cubes
2 cups plain flour
½ cup sugar
1 tsp baking powder
Pinch of salt
1 tbsp Supreme Cinnamon Powder
½ tsp Supreme Nutmeg Powder
¾ cup yogurt
½ cup water
2 eggs
Oil to shallow fry
Glaze:
1 cup icing sugar
¼ cup milk
1 tsp vanilla extract
METHOD
Heat enough oil to shallow fry over medium heat. In a large bowl, mix together plain flour, sugar, baking powder, salt, cinnamon powder, nutmeg powder. Add in water, eggs and yogurt and whisk until well blended. Mix in apples until they are evenly distributed. Once the oil is hot, gently drop large spoonfuls of batter into the oil and fry until deep golden on both sides. (Fry in batches and do not overcrowd the pan) Using a slotted spoon remove from oil and briefly drain on paper towels then place on a cooling rack. In a bowl, mix together, icing sugar, milk and vanilla extract. Once they are slightly cooled, drizzle with glaze.
