INGREDIENTS

4 ½ cups bread flour
1 ½ cup warm water
1 tsp salt
1 tbsp sugar
¼ cup Zaytuna Extra Virgin Olive Oil
1 ½ tbsp yeast
½ cup za’atar
¼ cup Supreme Natural Sesame Seeds
⅓ cup Zaytuna Extra Virgin Olive Oil

METHOD

In a bowl, mix together za’atar and natural sesame seeds. Set aside. In a bowl, mix together water, salt, sugar, ¼ cup olive oil and yeast. Set aside for 10 minutes or until the yeast has activated (foams up). Add flour and mix until well combined. Continue to knead until you have smooth and soft dough. Form dough into a ball and place in a lightly oiled mixing bowl. Cover and place in a warm place to prove. Leave to rise for 2 hours. Divide the dough into 10 equal parts and flatten each part into discs about 5-6 inches in diameter. Place the prepared manakeesh on lined baking sheets and brush each one with olive oil. Then sprinkle generous amounts of za’atar mix on top. Prove the manakeesh a second time for 20 minutes. Preheat oven to 180°c and bake for 10-12 Minutes until golden. Serve with labneh, fresh vegetables, honey, grilled halloumi and tea.
