INGREDIENTS
1 chicken breast- washed, sliced across and pounded for even thickness
2 tbsp oil
2 tsp Supreme Smoked Paprika
½ tsp Supreme Red Chilli Powder
½ tsp Supreme Chilli Flakes
½ tsp Supreme Coarse Black Pepper
Salt to taste
2 tbsp apricot jam
½ tsp Supreme Garlic Powder
1 tbsp vinegar
Supreme sesame seeds and sliced spring onions for garnish
METHOD
In a bowl whisk together oil, smoked paprika, chilli powder, chilli flakes, black pepper, salt, apricot jam, garlic powder and vinegar . Add chicken and mix well. Marinate overnight or for a minimum of 4 hours. Preheat the oven at 200°c. Place chicken on a non-stick baking sheet and spoon over remaining marinade. Bake in a preheated oven for 20-30 mins (depending on the thickness of the chicken).
Remove from the oven, cover with foil and rest for 5 minutes. Garnish with sesame seeds and sliced spring onions and serve.
